a winter recipe
I normally don't post about food or recipes, but the sweet potato stew I made this week was so good I can't let anyone miss out ; ) It's a lovely winter recipe. So for everyone that wants to try, here it is!
what you need
for 4 persons2 sweet potatoes (medium size)
500 grams crumbly potatoes
2 parsnips
1 celery stem
125 grams (vegetarian/vegan) bacon
1 head of baby romaine lettuce
1 sweet onion
1 garlic clove
20 gram/2 blocks of broth/bouillon
3 tablespoons mustard
3 tablespoons olive oil
fresh thyme
preparation
1 ) Clean vegetables!2 ) Cut the crumbly potatoes, the sweet potatoes and the parsnip in equal pieces.
3 ) Slice the celery.
4 ) Peel all the leaves from the baby romaine lettuce.
5 ) Peel the union and garlic. Chop the onion and finely chop the garlic.
6 ) Scrape the leaves off the thyme.

1 ) Start to boil 1 liter water and add 2 blocks or 20 gram bouillon/broth. Add the potatoes, the sweet potatoes and the parsnip and let is simmer gently for 20 minutes.2 ) Fry the vega(n) bacon strips in a frying pan for 4-5 minutes over high heat.
3 ) Add the celery, union, garlic and thyme and fry for 3 minutes over high heat.
4 ) Fry or grill in a new pan the baby romaine lettuce in 1 tablespoon oil for 3-5 minutes. Turn them halfway until they are golden yellow and lightly caramelized.
5 ) Mash the sweet potato, parsnip, and potato coarsely with a potato masher. Add the vega(n) bacon and 3 tablespoons of mustard. And if necessary a bit of broth or milk.
You could add chorizo sausages to the meal. But I think it's also lovely without them.
